Preheat oven to 400°F 200°C and grease a 9 inch pie dish. In a bowl mix shredded potatoes, 1 egg, half of the salt and pepper, and melted butter.

Press the potato mixture firmly into the bottom and sides of the dish to form a crust. Bake for 20 to 25 minutes until golden and set. Reduce oven temperature to 375°F 190°C.

In a large bowl whisk together the remaining eggs, heavy cream, milk, remaining salt, pepper, and paprika until smooth.

Sprinkle chopped bacon evenly over the pre baked potato crust, then add the shredded cheddar cheese.
